Recipe from my Great-Grandma Mae. Makes 12 dumplings.
Ingredients:
- 2 cups + 1 Tablespoon flour
- 2 teaspoons baking powder
- 1 1/2 teaspoon salt
- 2 Tablespoons butter + extra for topping and pan
- 1 Tablespoon shortening
- 7/8 cup milk
- 1 teaspoon cinnamon
- 2 Tablespoons brown sugar
- 3 tart apples
- 1 cup sugar
- 1 1/2 cup hot water
- 1/4 tsp lemon extract
- 1/2 tsp vanilla extract
Instructions:
- Preheat oven to 400℉.
- Butter large baking pan or casserole dish. (I used a 10×14 inch pan)
- Peel and chop apples. Pieces should be small and thin, about 1/8 inch thick and about 1/4 inch in size.
- Add apples, brown sugar, and cinnamon to bowl and mix to coat apples. Set aside.
- Combine flour, baking powder, 1 tsp salt, shortening, and 1 Tbsp softened butter in bowl of stand mixer.
- Turn mixer on low to cut butter and shortening into flour.
- Add milk in about 1/4 cup at a time.
- Mix until just combined.
- Roll out about 1 inch thick. Dough should be about 1 1/2 foot long (left to right) by 1 foot wide (up and down).
- Melt butter and brush onto dough.
- Pour apple topping onto dough and roll jelly-roll style.
- Cut into 12 equal pieces.
- Place in buttered pan and set aside.
- Boil water.
- Add sugar and boiling water to pan.
- Add 1 Tbsp butter, 1/2 tsp salt, 1 Tbsp flour, lemon extract, and vanilla.
- Bring to boil and simmer for 13 minutes.
- Pour mixture over uncooked dumplings.
- Bake for about 30 minutes or until golden-brown.
- Serve with ice cream, whipped cream, or heavy cream, and enjoy!
