Recipe From my Great-Grandma Mae. Makes one cake.
Ingredients:
- 5 eggs
- 5 Tablespoons cold water
- 1 cup sugar
- 1 cup sifted flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla
Instructions:
- Preheat oven to 350℉.
- Line 10.5×15 inch pan with parchment paper.
- Separate egg whites from yolks.
- Combine the yolks and the water in the bowl of an electric mixer.
- Beat on high until peaks form. This will take 2-3 minutes.
- Add 1 cup of sugar to the egg yolks.
- Mix well.
- In a separate bowl, sift flour, baking powder, and salt together.
- Fold flour mixture into yolk mixture with a silicone spatula.
- Add 1 teaspoon vanilla.
- Beat egg whites on high until peaks form. This will take 1-2 minutes.
- Fold egg whites into the yolk and flour mixture.
- Spread batter evenly into prepared pan.
- Bake 25-30 minutes.
- Dust a tea towel with 2 tablespoons of powdered sugar.
- Turn warm cake onto tea towel, you may need to loosen the sides a bit.
- Remove parchment paper.
- Cut crusts off with bread knife.
- Lay new piece of parchment paper on cake.
- Starting with end furthest from you roll new piece of parchment into cake.
- Place cake on cooling rack until completely cool.
- Fill with icing, whipped cream, frosting, or jam.
- Cover with deluxe chocolate icing.
- Enjoy!
